Rosemary Sweet Potatoes

Good source of Beta carotene (Vitamin A) - from sweet potatoes
Vitamin A is important for healthy skin, mucous membranes, bones, teeth, hair, vision and reproduction.

Yield: 4 servings

2 large sweet potatoes or yams, peeled or unpeeled and cut into ¾-inch chunks
(You also can use a different kind of potatoes)
2 Tbs extra-virgin olive oil
2 Tbs minced fresh rosemary
¾ tsp salt

Preheat the oven to 450 degrees F. Mist a baking sheet with nonstick cooking spray.
Put the sweet potatoes in large bowl. Sprinkle with the oil, rosemary, and salt. Toss until evenly coated. Arrange the sweet potatoes in a single layer on the preheated baking sheet. Roast in the oven for 25 minutes, or until tender.
