Peach-Oatmeal Breakfast Muffins

Good source of Omega 3 fats - from walnuts plus no added oils
Omega 3 is an important polyunsaturated fat for metabolism. It’s found in plant sources such as nuts and seeds.

Makes 12 large muffins

Wet ingredients:
¾ cup applesauce
1 cup raspberry (or other fruit) juice
3 bananas
½ cup maple syrup
3 peaches
1 cup strawberries (optional)
Dry ingredients:
1 tsp baking soda
1 Tbs corn starch
3 cups whole wheat pastry flour (or unbleached flour)
1 cup oats
1 tsp cinnamon
½ tsp ground cloves
¾ cup dates
½ cup walnuts


Wash and chop peaches and strawberries. Mash bananas. Chop dates and walnuts. Mix all wet ingredients. Mix all dry ingredients. Pour one mixture into the other, and stir. Place in non-stick muffintins. Bake at 375°F for 30 minutes or until done.
